Did you install Instant Text under Program Files?

If it is the case, your glossaries are probably in the virtual store.

Open a file browser and type %localappdata% in the address bar and then enter. You should now see the VirtualStore folder, double-click it, and you should now see a Program Files (x86) folder, double-click it, and if you now see an InstText folder then double-click it, and you will find your glossaries (the ones that get updated) in the glossary folder.
